Macaroni Salad

My sister gave me this yummy macaroni salad recipe and I thought I’d share:

1 lb. elbow macaroni
2-3 stalks celery
1 small onion
1 medium-sized green bell pepper
sweet pickle relish
4-5 eggs
mayonnaise
sugar

Cook macaroni according to package directions. Rinse and drain; add mayo until macaroni isn’t sticking together. Boil eggs, chop them and add them in. Chop onion, bell pepper and celery and add them in. Add 1/4 to 1/3 cup sweet pickle relish. Add more mayo to taste. Add 1 Tbsp. sugar. Stir well and chill overnight.

Southern Cooking (uh, I mean ‘Suth-ern Cuu-kin’)

Sometimes I just miss Southern cooking. Texas’ version of southern cooking is different than what I grew up with in Birmingham, AL.

Easy recipe

Jay and I tried a recipe out of Kraft Food & Family magazine last night – Easy Tomato Baked Chicken. It was pretty darn good, although I might add more parmesan and possibly more vinaigrette next time.

Thanksgiving dinner

I don’t normally enjoy cooking. I see it as a means to an end. But for some reason, I always get the cooking bug around the holidays. Due to family get-togethers, I’ve never really had the chance to cook a big meal myself, and I really want to this year. It may just be our little family in attendance, but I’m going to do it anyway.

Menu so far: turkey, green bean casserole, corn casserole, cranberry sauce, rolls, deviled eggs, pumpkin pie. Oh, and green olives. Can’t have a good meal without green olives. :)

I can’t wait.

We just fixed the only sweet thing that we could concoct from our household ’sweet’ ingredients: chex mix, coconut flakes and chocolate (melted).

We stirred the melted chocolate and poured it onto the cereal/coconut mixture, to find that half the spatula melted into the hot chocolate. Upon closer inspection, the spatula says “not heat resistant” on the handle. NOT HEAT RESISTANT? Who makes a #@(*#* spatula that isn’t heat resistant?!?!

So, now we have nothing left in the house that is sweet. Boo hoo, what a tragedy. I think I’ll go pout now.

company coming

Well, we’re having some friends over for dinner tonight. My husband is cooking as we speak. Cooking is one of those things that I see as a means to an end; my husband sees it as an art form. So, needless to say, he does the vast majority of the cooking.

Anyway, our friends are coming over to give me a much-needed html tables tutorial. One of my job duties is designing/building web pages, and tables are a necessary evil.

I never appreciated web design until I started doing it. I’ve basically taught myself everything I know, which isn’t really that much. But, I have done about 50 pages now, so I’m getting practice.

Back to the company again: these friends live in an impressive house in a nice neighborhood. I hope they don’t feel like they’re slumming coming to our apartment. We have Kool-Aid stains all over the carpet, messy handprints on the walls, and bent-up blinds from my curious little ones trying to peek outside.

But, hopefully, there is light at the end of the tunnel – our realtor has found 30 homes in our price range, and she’s bringing the print-outs to me tomorrow. For first-time homeowners on a limited budget, we’re incredibly picky. I don’t know if any of these homes will be up to snuff … we’ll see.
